Valid until 24th January 2024 4th January 2024 • The HERALD • Page 41 v THE NEXT HERALD IS OUT ON 25TH JANUARY v FOOD FOR THOUGHT Prep: 10 minutes Cook: 20 minutes Serves 4 Ingredients: 1 tbsp oil 1 onion, sliced (190g) 2 green chillies, 1 nely chopped, 1 sliced 1 tsp mild chilli powder ½ tsp ground cumin 400g can black beans, drained and rinsed 400g can chopped tomatoes 4 medium eggs Sliced avocado, sour cream and coriander to serve Method: Preheat oven to 200 o C/gas mark 6. Heat the oil in a large ovenproof frying pan and fry the onion and chopped chillies for 5 minutes. Stir in the spices and cook for 1 minute. Stir in the beans and chopped tomatoes with 100ml water and simmer for 5 minutes. Make 4 hollows and crack an egg into each. Scatter over the sliced chilli and bake for 8-10 minutes until the egg white has just set. Serve topped with avocado, soured cream and coriander. Cooks tip: Serve with crusty bread to mop up all the sauce. Early morning commuters can now energise themselves with a steaming hot cup of co ee as they embark on their commute on the Hythe Ferry. Hannah Howley has been serving up beverages from a professionally converted horse box at the Hythe Pier entrance since early November. Hannah had managed a co ee shop in Beaulieu before making the brave decision to go it alone. Her rst event at the beginning of October proved she had what it takes and following a positive response to an approach to the Hythe Ferry, she hasn’t looked back. Hannah is making travelling to and from work on dark, cold and wet winter days all the less arduous for commuters. She says: “I’m so passionate about wanting to make a difference, giving someone a great cup of coffee and a warm smile on their way to work is my way of doing just that”. e Howley Co ee Co. horse box is parked up at the entrance to Hythe Pier from 6.45am, in time for those with an early morning commute! Surplus food from supermarkets that would otherwise go to waste is collected by volunteers and used to cook tasty meals.
