As the price of owers has increased and consequently the cost of demonstrations, we have experimented with a few new ideas. e 1st of May was a beautiful, sunny, warm spring day, and was our a ernoon cream tea at “Annie’s”, of Acres Down Farm near Minstead. Set in beautiful gardens with an array of stunning plants, we enjoyed scones, cream and jam, a generous slice of cake and enough tea to keep everyone well watered! It wasn’t just the bees that were buzzing that a ernoon in the sunshine! One other customer was heard to ask how Annie pruned the wisteria growing up to the top of a very high conifer; the reply was “I don’t!” - it reaches a dizzy height, but gives a stunning display of owers all the way up the tree! Talking of food, we have an array of edible owers to add colour and avour to sweet and savoury foods. ese can be grown in the garden from spring to autumn. Be careful to know exactly which ower you are using and they are best collected early in the day. Wash and place in a bag in the fridge if not using immediately. Use the petals only and scatter over pudding, salads, dips etc as a garnish. Edible owers include sun owers, corn owers, viola, nasturtium (and leaves-roll and shred-peppery), courgette owers, pinks (dianthus), elder ower, marigold, rose, pelargonium, lavender, rosemary, calendula, polyanthus, chives, clover and mint. ey can be scattered over salads, sprinkled on desserts or cakes, mixed into butter or put in ice cubes. e petals make a really pretty garnish, certainly adding sunshine and colour to our food.
