Page 30 • The HERALD • 28th August 2025 v THE HERALD - YOUR COMMUNITY MAGAZINE v FOOD FOR THOUGHT Moroccan Couscous Salad with Feta Parcels, Watercress and Harissa Yoghurt The Watercress Company has developed some tempting recipes that allow your tastebuds to travel the world, even if you can’t. To Africa! Watercress is used in traditional Moroccan dishes like couscous, where it adds a peppery taste and healthy bene ts. Serves 4 • Prep time: 20 minutes • Cooking time: 10 minutes Ingredients • 2 x 85g bags watercress • 150g couscous • 300g feta • 2 egg yolks • Pinch of chilli akes • ½ a bunch coriander, chopped • ½ a bunch of mint, chopped • Juice of ½ a lemon • 1 red onion, nely sliced • 150g Chantenay carrots, washed • 4 tbsp white wine vinegar • 2 sheets lo pastry • 1 tbsp harissa • 75ml Greek yoghurt • 40g pistachios (no shells) • 1 pink grapefruit Method 1. Preheat the oven to 180°C. While you bring 150ml of water to the boil place the couscous in a bowl and add a good pinch of salt. Pour over the boiling water then cover tightly with cling lm. Leave for ve minutes before removing the cling lm and u ng up with a fork. Mix in the coriander and mint along with the lemon juice and chilli akes. Check seasoning and adjust to taste. Set aside. 2. Quarter the washed carrots lengthways and place into a bowl along with the sliced red onion. Add in a good pinch of salt along with the white wine vinegar and set aside to pickle. 3. Take the lo pastry and lay the sheets out at on a work surface. Cut into twelve equal squares and brush with egg yolk. Divide the feta cheese equally between each, placing as centrally as possible, then take the corners of each square of pastry and bring inwards, gently pinching together to create small parcels. Place the parcels onto a lined baking tray and place the tray into the pre-heated oven. Bake for 10-15 minutes, or until the pastry is lightly golden and crisp. 4. Tip the pistachios onto a baking tray and toast in the oven for ve minutes. Allow to cool slightly, then crush roughly with a pestle and mortar or the back of a knife. Mix the harissa with the yoghurt and add salt to taste. Peel and slice the pink grapefruit and keep ready for serving. 5. To serve, divide the watercress between four plates. Drain the pickled carrots and arrange on top. Pile on the couscous then add in the grapefruit slices. Drizzle the lot with the harissa yoghurt and sprinkle with pistachios before serving with the warm feta parcels. Join us as a volunteer for Age Concern New Forest as a Passenger Assistant and Lunch Club Assistant. As a Passenger Assistant, you will provide vital support to Older Individuals during their transportation to and from our lunch club in Totton. Your role will involve: • Assisting with helping passengers to board and disembark our Minibus. • Ensuring the safety and comfort of passengers during transit. • Providing companionship and engaging in friendly conversation. • Helping with any aids or personal items. As a Lunch Club Assistant, your role will include: • Assisting with the serving of meals. • Setting up and cleaning of the dining area. • Engaging with attendees to create a warm and friendly atmosphere. • We are looking for Friendly, Compassionate individuals who enjoy working with older People and who are reliable and punctual. • No Prior experience is necessary as training will be provided. If you are ready to lend a hand and bring joy to the lives of Older People, we’d love to hear from you. Along with a ra e, the event raised £389 which was topped up to £590 by H&W Rotary (the cost of a shelterbox). Children, parents, and grandparents enjoyed a lovely few hours playing games (feeding the bear, dressing the bear with an array of bowties, forest quoits), making bear masks and colouring, participating in a bear scavenger hunt, guessing the bear’s name, visiting the story corner, and enjoying a special bear cake! Picnic rugs and baskets were laid out, and everyone enjoyed their picnic lunch. We were scheduled to meet at e Grove Garden; unfortunately, the weather had other plans, so St. John’s Church Hall stepped in and hosted us. A big thank you to Bianca Hill from Glitter Glam Bar for coming along to face paint the children. Plans are already afoot by Hythe 2000 Charitable Trust for next year’s Teddy Bears’ Picnic!
