Serves 6 • Prep time: 25 minutes • Cooking time: 55 minutes plus one hour, chilling Ingredients: 800g beef llet 2 tbsp vegetable oil 500g watercress 12 slices smoked prosciutto 500g ready-made pu pastry 2 egg yolks Plain our 1 tbsp English mustard Method: Pat the llet dry with kitchen paper, then rub all over with 1 tbsp of the vegetable oil and season well with sea salt. Heat the remaining oil in a large frying pan until smoking hot, then sear the llet until wellbrowned on all sides, including the ends. Place the meat in a tray o the heat and brush the beef all over with mustard. Tip the watercress into a colander then pour over boiling water to wilt it, then follow with cold water. Squeeze the watercress to extract as much water as possible. Set aside. Lay a large piece of cling lm on a work service. Lay the prosciutto on the cling lm in a row, ensuring all slices overlap with no gaps. Cover the prosciutto with another layer of cling lm then use a rolling pin to roll it out to a thin, even layer. Remove the top layer of cling lm and scatter the wilted watercress evenly over the prosciutto, then replace the cling lm and roll at again. Remove the top layer of cling lm again and sit the beef on top, then use the edge of the cling lm to li and roll the prosciutto and watercress layers to encase the beef Thousands of Pounds Raised In Fight To Find Cancer Cures Tesco colleagues from across Hampshire have raised more than £27,000 for Cancer Research UK following a mammoth 12-mile sponsored walk along the Jurassic Coast. Colleagues from stores in Southampton, Portsmouth, Gosport, Havant, Fareham and Winchester embarked on the Jurassic Coast Challenge from Weymouth Pavilion to Lulworth Cove in September to raise money for a cause close to the hearts of many taking part. Tesco lead manager Danielle Croad said: “Raising such an incredible amount for Cancer Research UK shows just what’s possible when you put your mind to something. What started as a conversation with my mentor six months ago has turned into something incredible. I’m extremely proud of everyone involved.” Colleagues began with an early morning warm-up by Weymouth Pavilion before setting o on their trek along the south coast, with a lot of challenging terrain to overcome along the way. Danielle added: “What started with a fun warm-up quickly turned into some testing hills, which aren’t to be underestimated, but the energy was indescribable. Everyone kept each other’s spirits up with encouragement, lots of laughter, and even a few attempts at singing YMCA along the way. What stood out most was how great it felt to see everyone together, supporting one another and sharing the experience. By the end, there was a real sense of achievement, as well as some tired feet.” Around 80 Tesco colleagues took part in the walk, while others also ran in-store fundraising activities including a sponsored in-store bike ride, book sales, children’s games and even a cosplay event to help raise a grand total of £27,936. Store Manager and regional community lead Scott Moonan said: “As a group of colleagues, we have worked extremely hard to raise money for Cancer Research UK. Our store colleagues have worked tirelessly in recent weeks. We couldn’t be prouder of our team for going the extra mile and raising money for a fantastic cause which helps so many people across the local area and beyond.” Eve Mitchell, Associate Director of Supporter Relationship Management at Cancer Research UK, said: “Our sincere thanks to all the Tesco colleagues involved in organising this incredible fundraiser for Cancer Research UK, and congratulations to everyone who laced up their walking boots and crossed the finish line at Lulworth Cove. Lightly our a clean work surface and roll the pastry to a rectangle about 8” x 10”. Lightly brush the pastry with beaten egg yolk, then remove the cling lm from the beef and place in the centre. Fold the shorter edges over the beef, then roll the whole piece of pastry around the llet to encase fully. Place the Wellington in the fridge with sealed side down and chill for at least 30 minutes or up to 24 hours. Preheat oven to 200°C. Brush the Wellington with egg yolk, then use a sharp knife to gently score a criss-cross pattern all over the top. Sprinkle with sea salt then transfer to a baking tray. Roast for 10 minutes at 200°C, then turn down to 180°C and continue to cook for 25 minutes for rare, 30 minutes for medium rare and 35 minutes for medium. If the pastry begins to darken too much, cover with foil and continue cooking. Remove the Wellington from the oven and leave to rest for a minimum of 15 minutes. Cut the Wellington into six generous slices and serve with gravy on the side. Meetings take place at St Andrew’s Church starting at 2pm. On 19th November the ladies are looking forward to a trip to Otter Nurseries in Lymington for lunch and to enjoy looking at the Christmas displays and do some Christmas shopping. Wednesday 17th December will be their Christmas lunch at Dibden Golf Centre, with excellent ra e prizes and some entertainment provided. New members are welcome to join this great group of ladies who make it a lovely way to spend two hours. As well as regular meetings they also have interest groups including Knit and Natter, lunch club and a skittles team. Other interest groups starting up include a walking group, social studies group and a lm group.
