INGREDIENTS 60g chorizo (skin removed, halved length ways and thinly sliced) 2 leeks, thinly sliced 2 red peppers, deseeded and thinly sliced 2 cloves garlic, crushed 1 tsp smoked paprika 1.2 litres of boiling chicken or vegetable stock 500g dried macaroni 200g plain quark 60g reduced fat cheddar nely grated METHOD Place a large, non-stick pan over a medium-high heat. When it’s hot add chorizo and fry for 1 minute. Add leeks, peppers and garlic. Cook for 3 minutes, stirring continuously. Add paprika and stir for 1 minute. Add the stock and macaroni to the pan. Bring to the boil, stir to avoid sticking. Reduce heat to low, cover and cook for 7-8 minutes until stock is almost absorbed and macaroni is just tender. Meanwhile preheat your grill to high. Remove macaroni mix from the heat for a minute or two. Stir in the quark and season lightly. Spoon into heat proof dishes that t under your grill. Sprinkle with cheese and grill for 5 minutes until golden brown and bubbling. Serve with salad or vegetables.
