Give your breakfast a healthy makeover with this simple and delicious pancake recipe! Ingredients 2 medium ripe bananas 2 eggs (or two ax eggs if vegan) ½ cup milk of your choice 1 tsp vanilla extract 1 ½ cup rolled oats 2 tsps baking powder ½ tsp cinnamon Pinch of salt Cooking oil Method Blend all the ingredients together until smooth. Heat up a frying pan and lightly coat with a little cooking oil. Once the pan is hot, add around 1 /3 cup of the batter to the pan for each pancake and cook for 2-4 minutes until you see a few bubbles appearing at the edges. Flip the pancakes and cook until golden brown on the other side. Repeat with the rest of the batter until you have yourself a plate of delicious pancakes! Serve with fresh fruit or a dollop of natural yogurt. Enjoy! BREAKFAST PANCAKES not swap your regular baked potato for a baked sweet potato (without butter). Choose a healthy lling, such as vegetarian chilli, tuna, baked beans or cottage cheese and serve with a healthy salad. • Try switching from regular mashed potato to mashed sweet potato. Alternatively, you could make your mash with 50% white potatoes and 50% sweet potatoes. Instead of adding cream, butter or salt, try adding a splash of milk or low- fat crème fraiche and a pinch of nutmeg before mashing. Mashed sweet potato makes a great topping for shepherd’s pie or sh pie, or you can serve it alongside a roast dinner. • Ditch your deep-fat fryer and switch from chips to sweet potato wedges, baked in the oven. Cut your sweet potatoes into wedges (keep the skins on for extra bre), toss them in a small amount of oil and add some dried herbs and/or spices, such as Cajun spice mix, cumin or paprika. Roast in the oven for 15-20 minutes. Serve with a dollop of reduced calorie crème fraiche. Sweet potatoes make a tasty alternative to white potatoes and they are very versatile. Unlike white potatoes, sweet potatoes count towards your 5 a day and they are packed with vitamins and bre to keep you healthy. Sweet potatoes can be mashed, baked, roasted and boiled in the same way as white potatoes. Councillor Rob Humby, Deputy Leader and Executive Member for Economy, Transport and Environment, agreed to extend the Wheels to Work contract for a further two years with an option to extend for another four years, subject to funding. e existing contract for the Wheels to Work Loan Scheme will expire on 31st March 2021 . e new contract is expected to commence on 1st April 2021 for an initial period of 2 years. e scheme currently operates in East Hampshire, New Forest, Test Valley and Winchester and has the capacity to loan out 28 mopeds across these four districts. Two district councils in the county, East Hampshire District Council and New Forest District Council, currently contribute towards the costs of the scheme being provided in their areas. e new contract will see a number of changes including the potential for purchasing electric mopeds instead of conventional mopeds where feasible and extending the scheme to those over 25 years old in speci c circumstances. e potential to extend the scheme to other district areas of Hampshire and increase the range of services o ered could also form part of the extended scheme if the additional funding required for this can be identi ed. Part of the preparation for the procurement of a new contract will involve seeking the views of those who have used the scheme in the past to nd out how it might be improved in the future to help more young people get to their rst jobs, or obtain the skills they need to secure employment.
