Ingredients: 200g Watercress 2 x 160g Cans Albacore Tuna, drained 1 Red Onion, very nely chopped 2 Red Chillies, very nely chopped 100g Desiccated Coconut, unsweetened 2 Limes, juice of both, zest of 1 1 sprig Curry Leaves, leaves nely chopped Salt & Cracked Black Pepper Method: 1. In a bowl, mix the tuna, onion, chillies, coconut, lime juice & zest and curry leaves. 2. Massage with your hands to rub and infuse the ingredients. You want to begin to form a paste. 3. Taste and season with cracked black pepper and a little salt if your sh isn’t salty already. 4. Dee Haas, Chair of CPRE Hampshire says: “We are very pleased to have such an experienced and talented group of new trustees to take forward the work of the charity. Thanks to their support, and that of our members and other volunteers, CPRE Hampshire can even more effectively promote, enhance, and protect the countryside in Hampshire. Our role is even more important now as we all realise the importance of our green spaces and countryside to mental and physical health”. CPRE Hampshire’s new trustees are: Neil Henderson, Secretary to the Board and Governance Lead – Neil, a barrister of 15 years’ standing, who is currently studying for an executive MBA at the University of Surrey. Neil has a long-standing interest in the environment and the protection of the countryside and takes on the role of Secretary to the Board of Trustees and Governance Lead. John Lauwerys – John, worked for many years in university management, including as Secretary and Registrar of the University of Southampton. Following his retirement John acted as a consultant in the higher education sector and chaired the action group ADD to victory in Eastleigh. John lives in Brambridge and was recently elected as Chair of Hampshire Beekeepers Association. Liz Michel, PR and Marketing Lead – Liz, a geology graduate turned senior marketing executive, with extensive experience in banking, telecoms, healthcare and retail. Liz believes passionately in the importance of people getting out and spending time in the countryside or in green spaces. She takes on the role of trustee responsible for PR and Marketing. John Rosling – John, an experienced business leader, director, academic and author, with a background in marketing, but now specialising in governance and ethics. A graduate of Geography with Business, John lives with his family in Bishop’s Waltham and is strongly committed to protecting the countryside and took the lead in opposing plans for a major new power station on farmland near his home. CPRE Hampshire couldn’t exist without the support of its members and volunteers.
