Well hopefully there’s not too much longer to wait - In the meantime, this fabulous recipe for this classic Greek dish will transport you there! Spanakopita (spinach and feta pie) Our Slimming World version of the Greek classic, spanakopita. Slice through the crispy lo pastry and enjoy an amazing taste sensation. Serves 4 1 hour Ingredients • 1kg frozen spinach • Bunch of spring onions, nely chopped • Small handful of fresh parsley, nely chopped • Small handful of fresh dill, nely chopped • 100g reduced-fat feta cheese, crumbled • 250g low-fat natural cottage cheese • 2 garlic cloves, crushed • Pinch of freshly grated nutmeg • 3 eggs, lightly beaten • Low-calorie cooking spray • 2 x 45g ready-rolled lo pastry sheets, halved Method 1. Preheat your oven to 180°C/Fan 160°C/Gas 4. 2. Cook the spinach according to the packet instructions, then tip into a colander. Press out the excess liquid and squeeze dry with kitchen paper or a clean tea towel. Roughly chop and set aside to cool in a large bowl. 3. Add the spring onions to the spinach along with the parsley, dill, feta, cottage cheese, garlic, and nutmeg. Season to taste and mix to combine then pour in the eggs and mix again. 4. Spray a 30cm x 20cm ovenproof dish with low calorie cooking spray and spoon in the spinach mixture. Lightly spray the lo sheets with low-calorie cooking spray and scrunch them over the top of the spinach mixture to cover. Bake for 30-35 minutes, or until golden, and serve warm with your favourite potatoes and salad.
