Ingredients: 4 Red Mullet Fillets (or Mackerel, salmon, sardines etc) 1 Onion, nely sliced 800g Baby Potatoes, skin on 4 tbsp Oil Pinch of Salt 2 tsp Nigella Seeds 200g Watercress 20g Basmati Rice Lemon to serve Masala Spice Blend: 1 tsp Turmeric 2 tsp Chilli Powder 1 tsp Cracked Black Pepper 1 tsp Salt Raita: 300g Full Fat Greek Yogurt ½ Cucumber, seeds removed, julienned 1 Clove Garlic, minced ½ tsp Cumin Seeds ½ tsp Nigella Seeds 1 tsp Oil Pinch of Salt Method: 1. Begin with the roasted rice. Add the rice to a dry frying pan and heat to the highest heat. Toast, shaking the pan until it turns golden brown and smells nutty. Remove, allow to cool then grind to a coarse crumb in a blender. Set aside in a jar (this keeps for ages and adds great crunch to salads). 2. For the raita, mix the yogurt, cucumber, garlic and salt in a bowl. Heat the oil in a pan and add the cumin and nigella. Fry until beginning to pop then pour the whole lot into the yogurt bowl. Stir in and allow to rest. 3. Add the potatoes to a pan, cover with cold water and cook until just tender. Remove, drain and allow to steam until completely dry. If you have time transfer them to the fridge on a wire rack to get really dry. 4. Rub the spice mix over your sh llets. Set aside while you cook the potatoes & onion. 5. Heat the oil in a large frying pan and fry the onion until crisp and golden. Drain on kitchen paper, sprinkle with a little salt and set aside. 6. Add the potatoes to the hot oniony oil and press down with a fork to lightly crush. You want to retain some shape but give lots of crumbly edges to go super crispy. Fry for 2-3 minutes until a crust forms, sprinkle with the salt & nigella and ip. 7. Continue to cook until all the edges are crisp (you may need to cook in batches) and set aside. 8. Heat a splash more oil in the pan and add the sh llets skin side down. Have the heat on medium high to prevent the edges from curling up. If they do, the heat is too high, and the skin may scorch. Cook for 2 minutes, ip and cook 1 minute more. 9. Remove from the heat and allow to rest while you assemble the salad. 10. Lay the watercress on a platter and tumble over the potatoes. Spoon over the raita, top with the fried sh and nally the crispy onions and 2 tbsp roasted rice. Serve with lemon wedges for squeezing. The Perfect BBQ Combination Masala Fried Red Mullet, Potato & Watercress Salad From The Watercress Company Lockdown restriction prevented Home-Start volunteers offering ‘in home’ support so the team switched to enable them to offer remote support. They were thrilled to get back to face-to-face support in the home and more group activity to provide practical and emotional support. The next step is combatting the high numbers of supported families that have, and continue to, struggle with poor mental health. eir volunteers have listening skills training and bring empathy from their own life and parenting experiences. Many families across Hampshire have felt trapped and lonely during the pandemic. Opportunities for ‘in the home’ support, encouragement and understanding from Home-Start volunteers has been limited. e under 5’s have missed out on play opportunities to support their development especially sharing and playing alongside others. Parents of babies born during lockdown have been impacted greatly, some could not have birthing partners, and the normal antenatal and postnatal support and guidance processes were disrupted. Informal visits and chats with friends and the wider family did not happen, meaning many babies have seen very few others, for the rst 12 months of life! Charlotte Dooley, Business Development Manager said: “It’s wonderful to see recent photos of our families having fun outdoors and seeing the ingenuity of our staff and volunteers to raise awareness and funds for our work. It has been a difficult year and we are all looking forward to more face to face activities to support families in need” Their aim is to reconnect and increase family support from just under 400 families last year to over 500 families in 2021- 22. This means increasing income and volunteer numbers.
