Surprisingly Sweet Treats with Watercress Chilli with chocolate is generally regarded as a culinary delight, so why is the ery pepperiness of watercress still relatively unexplored in sweet treats? e Watercress Company is determined to change this and through working with local chefs has developed a ra of recipes for cakes and desserts that demonstrate just how delicious watercress can be in a sweeter dish. The distinctive peppery flavour of watercress is down to PEITC a compound which in recent years has been scienti cally shown to help prevent certain cancers. Added to that watercress contains over 50 vital vitamins and minerals, and gram for gram it boasts more calcium than milk, more Vitamin C than an orange, more folate than a banana and more Vitamin E than broccoli. Watercress is also a rich source of bre and of crucial antioxidants, both vital for gut health which is linked to immunity and mental health. Last, but not least, watercress is also high in Vitamin A and rich in iron. e combined high levels of Vitamins A and C with iron makes watercress an essential source of iron for vegans and vegetarians. is is because for plant iron to be absorbed, vitamins C and A are required to convert it into a more easily absorbable form such as haem iron as found in meat. Not all veg that contain iron have such high levels of Vitamin A & C that watercress has, and so the iron is not as readily available. But while all that’s great, does watercress actually taste good in something sweet? You bet! And to prove it, try this recipe and you’ll soon give chilli the cold shoulder! GRILLED PINEAPPLE, COCONUT CREAM, WATERCRESS CARAMEL Serves 4 • Prep Time 20-30 minutes • Cook Time 40 minutes Ingredients 1 Whole Pineapple, skin removed 200g Caster Sugar 140g Unsalted Butter 120ml Single Cream 1 Strip Lime Zest, removed with a peeler 10g Watercress 2 Cans Coconut Milk, chilled in fridge overnight 1 Vanilla Pod, seeds scraped 2 tbsp Icing Sugar Method: 1. Preheat oven 180˚C, line a small baking tin with non-stick paper. 2. Using a paring knife, remove the eyes on the pineapple, following the helix pattern that they make, this will leave you with a pretty spiral pattern that will cling to the caramel. 3. To make the caramel, heat the cream just to boiling point in a small pan and set aside. 4. Make a direct caramel by taking a small frying pan and heating over a medium heat. Cover the base with a thin lm of the sugar and, without stirring, keep sprinkling over the sugar as patches dissolve. If you feel like it is going too fast, remove the pan from the heat and swirl to distribute any lumps. 5. Once all the sugar has dissolved, turn up the heat and bubble until it reaches a rich amber colour. Remove from the heat. 6. Add 50g butter along with the lime peel, cream and watercress. It will splatter but that’s ne. Whisk to combine, if it seizes at all return to the heat and allow to dissolve. 7. Allow the mixture to cool to around 60˚C then remove the lime peel. Blend in a blender with the remaining butter until very smooth. 8. Pour half the caramel over the pineapple and roast, basting every 10 minutes for 30-40 minutes or until caramelised and tender throughout. 9. Meanwhile, open the cans of coconut cream and carefully remove the set layer from the top of each can. Have a chilled bowl ready. 10. Whip for 30 seconds in the chilled bowl before adding the icing sugar and vanilla seeds. Whip for 1 minute. 11. To serve, cut the pineapple into slices and serve with the coconut cream and some extra caramel on the top. You’ll be jigging away to folk, soul, ska with Saturday night hosting the UK’s leading Elton John tribute band – Ultimate Elton & e Rocket Band. Reservations can be pre- booked for tables of up to 8 guests. Each year the festival supports a fantastic local charity and this year it’s the turn of Lymington Sailability who take the less able bodied out onto the Solent, teaching them how to sail and putting a much needed smile on everyone’s faces. Friday and Saturday are split into ‘sessions’, 11am–3.30pm and 4pm–8.30pm. With Sunday running from 11am–6pm.
