The annual Alresford Watercress Festival will take place on Sunday 19th May and it being the 20th anniversary, who knows what additional madness and mayhem will ensue! All the usual popular attractions will be taking place: the crowning of the Watercress King and Queen followed by the dispersal of fresh, new season watercress to the crowds, cookery demos by celebrity chefs, live entertainment, food stalls, craft stalls and of course, the world-renowned and hugely anticipated World Watercress Eating Championships. But the organisers have a few surprises up their sleeves to make sure the 20th annual Watercress Festival is truly one to remember. Watercress is grown in natural spring water that bubbles up from underground aquifers mainly in Hampshire and Dorset. Alresford is known as the ‘Capital’ of Watercress because of the important role it played in the growing and transportation of fresh watercress by train to the fresh produce markets of the North and London. Today, ride on the Watercress Line vintage steam train (even go to the festival on it) and relive its Victorian heyday. Visit: www.brockenhurstwineclub. co.uk or to attend a session telephone John Harris on 07714 261251 or email: jharris.lydith@btinternet.com Watercress Festival CABBAGE, PANCETTA & BEAN SOUP From I Love Fruit & Veg from Europe Prep: 15 minutes Cook: 8-10 minutes Serves 4 ½ tbsp extra virgin olive oil, plus extra for drizzling 150g diced pancetta 400g can chopped tomatoes 800ml chicken stock 400g can cannellini beans, drained and rinsed ½ Savoy cabbage, Cooks tip Swap the cannellini beans for butter or kidney beans. shredded (300g) ½ x 25g pack basil, shredded Heat ½ tbsp oil in a large saucepan and fry the pancetta for 2-3 minutes. Add the tomatoes, stock and beans and bring to the boil. Stir in the cabbage and cook, covered for 5 minutes. Add the basil and season with black pepper. Drizzle with a little oil and serve with crusty bread. Free Community Cook Ups The Waterside Food Project, part of the New Forest Aquaponics CIC family of projects, host a FREE Community Cook Up every Thursday 3.30pm to 5.30pm at Blackfield Baptist Church on Hampton Lane. Surplus food from supermarkets that would otherwise go to waste is collected by volunteers and used to cook tasty meals. Go along for some tasty food and great company, everyone is welcome. The Waterside Food Project aims to reduce food waste across the Waterside and also runs the Community Fridge in Hythe Library.
